The Science

ISO 5495: Paired Comparison

WEC uses the ISO 5495 Sensory Analysis methodology — the international standard for paired comparison testing. This is the same protocol used in professional food science laboratories worldwide.

In a paired comparison, judges receive two samples simultaneously and must choose which one is superior. This eliminates the ambiguity of numerical scoring and produces statistically significant results.

By using only 3 elite sensory judges rather than large panels, we ensure consistency, expertise, and accountability. Every judge's decision is recorded and published.

Every year, someone wins the World Barista Championship. They perform an elaborate routine on stage. The judges taste their coffee. The crowd applauds.
